Chicken Pasta

Ingredients
  

  • 1 pound spaghetti or other pasta
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • 4-6 cloves garlic, minced
  • ¼ cup flour
  • 3 cups chicken broth
  • ½ cup heavy cream
  • 15 ounce fire roasted tomatoes, undrained
  • 1 tsp dried parsley
  • 1 tsp basil
  • 1 tsp chicken bouillon
  • ½ tsp oregano
  • ½ tsp onion powder
  • ½ tsp salt
  • ½ tsp pepper
  • ¼-½ tsp red pepper flakes
  • cups sharp cheddar cheese, grated
  • ½ cup parmesan cheese, grated
  • 2 cups rotisserie chicken, cut into bite-size pieces

Instructions
 

  • Cook pasta al dente according to package directions. Drain into colander over bowl saving pasta water. Set aside.
  • Melt butter in large pan with olive oil. Whisk in flour and cook and stir over medium heat for about 2 minutes.
  • Add garlic, cook and stir for about 30 seconds.
  • Over medium-low heat whisk in broth, cream, tomatoes with juice, chicken bouillon and all seasonings. Simmer and stir until thickened for 5-7 minutes.
  • Reduce heat and stir in cheeses until melted.
  • Stir in pasta and chicken until pasta is well coated. If the pasta is too dry add pasta water until desired creaminess.
  • Garnish with fresh chopped parsley and grated parmesan.
