Chicken Pasta

- 1 pound spaghetti or other pasta
- 2 Tbsp olive oil
- 2 Tbsp butter
- 4-6 cloves garlic, minced
- ¼ cup flour
- 3 cups chicken broth
- ½ cup heavy cream
- 15 ounce fire roasted tomatoes, undrained
- 1 tsp dried parsley
- 1 tsp basil
- 1 tsp chicken bouillon
- ½ tsp oregano
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp pepper
- ¼-½ tsp red pepper flakes
- 1½ cups sharp cheddar cheese, grated
- ½ cup parmesan cheese, grated
- 2 cups rotisserie chicken, cut into bite-size pieces
Cook pasta al dente according to package directions. Drain into colander over bowl saving pasta water. Set aside.
Melt butter in large pan with olive oil. Whisk in flour and cook and stir over medium heat for about 2 minutes.
Add garlic, cook and stir for about 30 seconds.
Over medium-low heat whisk in broth, cream, tomatoes with juice, chicken bouillon and all seasonings. Simmer and stir until thickened for 5-7 minutes.
Reduce heat and stir in cheeses until melted.
Stir in pasta and chicken until pasta is well coated. If the pasta is too dry add pasta water until desired creaminess.
Garnish with fresh chopped parsley and grated parmesan.
