Cranberry Orange Bread

Orange and cranberries together make for one of the very best quick breads! @mostdeliciouslife.com

Servings 1 loaf

Equipment

  • 1 regular loaf pan **The size can vary, may need to adjust baking time.

Ingredients
  

  • 2 cups flour
  • ¾ cup sugar
  • tsp baking powder
  • ½ tsp salt
  • ½ tsp baking soda
  • ¼ cup butter, softened
  • 1 Tbsp grated orange rind
  • ¾ cup orange juice
  • 1 egg
  • 1 cup dried cranberries, roughly chopped
  • ½ cup chopped pecans *optional

Instructions
 

  • Preheat oven to 350°.
  • Prepare loaf pan. Place bottom of pan on parchment paper and trace with a pen. Cut out and place on the inside of the loaf pan. Spray with cooking spray.
  • Measure dry ingredients into a large bowl and mix together.
  • Add softened butter. Mix into flour with fork until crumbly.
  • Stir in grated orange rind, orange juice and egg until just mixed.
  • Stir in cranberries and nuts.
  • Spoon batter into prepared loaf pan and spread with spoon.
  • Bake for 55-65 minutes. Stick into center of loaf with a sharp knife...if there is batter on the knife continue cooking until knife comes out clean.
  • Use a butter knife to go around the edges of the loaf and turn out onto cooling rack.
