Cranberry Orange Bread
Orange and cranberries together make for one of the very best quick breads! @mostdeliciouslife.com

- 2 cups flour
- ¾ cup sugar
- 1½ tsp baking powder
- ½ tsp salt
- ½ tsp baking soda
- ¼ cup butter, softened
- 1 Tbsp grated orange rind
- ¾ cup orange juice
- 1 egg
- 1 cup dried cranberries, roughly chopped
- ½ cup chopped pecans *optional
Preheat oven to 350°.
Prepare loaf pan. Place bottom of pan on parchment paper and trace with a pen. Cut out and place on the inside of the loaf pan. Spray with cooking spray.
Measure dry ingredients into a large bowl and mix together.
Add softened butter. Mix into flour with fork until crumbly.
Stir in grated orange rind, orange juice and egg until just mixed.
Stir in cranberries and nuts.
Spoon batter into prepared loaf pan and spread with spoon.
Bake for 55-65 minutes. Stick into center of loaf with a sharp knife...if there is batter on the knife continue cooking until knife comes out clean.
Use a butter knife to go around the edges of the loaf and turn out onto cooling rack.
