Grasshopper Brownies

Brownies
- **OR USE BROWNIE MIX
- 1 cup shortening
- 2 cups sugar
- 4 large eggs
- 2 tsp vanilla
- 4 ounces unsweetened baking chocolate **melted and cooled
- 1½ cups flour
- 1 tsp baking powder
- 1 tsp salt
Mint Filling
- 1 cup butter **room temperature
- 6 ounces cream cheese **room temperature
- 5 cups powdered sugar
- 1½-t tsp mint extract **can use peppermint extract
- 4-6 drops green food coloring
Chocolate Topping
- 2 cups semi-sweet chocolate chips
- ⅔ cup butter
Preheat oven to 350°.
Grease 9x13 inch baking dish.
In mixing bowl, cream together shortening and sugar.
Beat in eggs, vanilla and melted chocolate.
Mix dry ingredients and add to chocolate mixture.
Spread in prepared pan. Bake for 25-minutes. *Shake pan slightly to see if center is set.
Allow to cool completely.
Mint Filling
In mixing bowl, beat together butter, cream cheese and powdered sugar.
Add mint extract and food coloring. Whip with beaters until well mixed and creamy.
Spread onto cooled brownies. **If necessary trim edges of brownies first.
