Haluski - Fried Cabbage and Noodles

- 6 oz thick bacon
- 6 Tbsp butter
- 1 large onion, halved and thinly sliced
- 1 small cabbage - halved, cored and thinly sliced **about 5-6 cups
- 1 cup carrots, grated
- 2 cloves garlic, minced
- 9 oz egg noodles
- 2 tsp black pepper
- 1 tsp salt
- 1 Tbsp lemon juice
Cut bacon into ¼ inch pieces. Fry over medium-high heat until bacon is crispy but not burnt. Remove bacon pieces and drain on paper towels. Add butter to bacon grease in pan and stir until melted.
Stir in onions and ½ tsp of salt. Cook and stir occasionally over medium high heat until onions are soft and starting to carmelize, about 10 minutes.
Add cabbage and carrots. Continue cookies over medium-high heat until cabbage is reduced by about half, 10-12 minutes.
Meanwhile, cook noodles according to package directions for al dente. Drain and save ¾ cup of the pasta water.
Add garlic to cabbage mixture. Cook and stir for 1 minute.
Stir in noodles, pasta water, salt, pepper, bacon and lemon juice. Stir well. Serve hot.
