Haluski - Fried Cabbage and Noodles

Ingredients
  

  • 6 oz thick bacon
  • 6 Tbsp butter
  • 1 large onion, halved and thinly sliced
  • 1 small cabbage - halved, cored and thinly sliced **about 5-6 cups
  • 1 cup carrots, grated
  • 2 cloves garlic, minced
  • 9 oz egg noodles
  • 2 tsp black pepper
  • 1 tsp salt
  • 1 Tbsp lemon juice

Instructions
 

  • Cut bacon into ¼ inch pieces.
    Fry over medium-high heat until bacon is crispy but not burnt. Remove bacon pieces and drain on paper towels.
  • Add butter to bacon grease in pan and stir until melted.
  • Stir in onions and ½ tsp of salt. Cook and stir occasionally over medium high heat until onions are soft and starting to carmelize, about 10 minutes.
  • Add cabbage and carrots. Continue cookies over medium-high heat until cabbage is reduced by about half, 10-12 minutes.
  • Meanwhile, cook noodles according to package directions for al dente. Drain and save ¾ cup of the pasta water.
  • Add garlic to cabbage mixture. Cook and stir for 1 minute.
  • Stir in noodles, pasta water, salt, pepper, bacon and lemon juice. Stir well. Serve hot.
