Cover a sheet pan with foil and spray with cooking spray.
Preheat oven to 375°.
Peel the sweet potatoes and cut into 1-2 inch pieces and spread on the sheet pan.
Peel and cut onion into small wedges and spread over sweet potatoes.
Add as many carrots as you wish on top.
Drizzle the veggies with olive oil and mix with your hands.
Place the chicken thigh pieces evenly amongst the veggies.
Spread the sprigs of rosemary on top.
Cut and juice one orange. Add the honey, soy sauce and garlic. Whisk together.
Drizzle over the chicken and veggies.
Bake uncovered for 20 minutes.
Remove from oven and use a spoon to baste the chicken and veggies with the sauce.
Return to oven and bake 20 more minutes.
Remove and baste once more.
Cut the remaining orange into slices and spread them over the chicken and veggies.
Bake 15 minutes.
Remove from oven. Use a fork and knife to break the chicken into pieces. Salt and pepper to taste.Serve over rice.
