I am IN LOVE with Sheetpan Dinners. There is something about throwing everything onto a sheetpan, adding flavors and spices and roasting it altogether. AND, the smell is INSANE!!! 

Start by chopping up sweet potatoes and a red onion. Now I know onions might be a problem for some people...but these are cut into big enough pieces that they are easy to avoid,,,but you will still get the flavor they provide!

 

 

 

 

 

 

 

Cover a sheet pan with foil…don’t use parchment paper…it makes a wet mess. Spread all those pretty veggies out.

 

Make the easy-peasy drizzle….

 

                                And drizzle away!

 

Bake for awhile and baste everything…

 

Enjoy the smell…..THE SMELL!!!

Honey Garlic Chicken Sheetpan Dinner

The smell alone makes this worth making. Roasted sweet potatoes and onions with tender chicken thighs in a honey garlic sauce with fresh rosemary. Heaven. @mostdeliciouslife.com

Ingredients
  

  • 1 pound sweet potatoes
  • 1 red onion
  • 1-2 cups baby carrots
  • 4-5 fresh rosemary sprigs
  • 1 Tbsp olive oil
  • 6 chicken thighs, boneless & skinless
  • 2 oranges
  • ½ cup honey
  • 2 Tbsp soy sauce
  • 4 tsp garlic, minced
  • salt & pepper

Instructions
 

  • Cover a sheet pan with foil and spray with cooking spray.
  • Preheat oven to 375°.
  • Peel the sweet potatoes and cut into 1-2 inch pieces and spread on the sheet pan.
  • Peel and cut onion into small wedges and spread over sweet potatoes.
  • Add as many carrots as you wish on top.
  • Drizzle the veggies with olive oil and mix with your hands.
  • Place the chicken thigh pieces evenly amongst the veggies.
  • Spread the sprigs of rosemary on top.
  • Cut and juice one orange. Add the honey, soy sauce and garlic. Whisk together.
  • Drizzle over the chicken and veggies.
  • Bake uncovered for 20 minutes.
  • Remove from oven and use a spoon to baste the chicken and veggies with the sauce.
  • Return to oven and bake 20 more minutes.
  • Remove and baste once more.
  • Cut the remaining orange into slices and spread them over the chicken and veggies.
  • Bake 15 minutes.
  • Remove from oven. Use a fork and knife to break the chicken into pieces.
    Salt and pepper to taste.
    Serve over rice.
