Preheat oven to 400°.
Spray 2 baking sheets with cooking spray.
Scrub potatoes and cut out any bad parts. Dry with paper towels.
Slice potatoes about ¼ inch thick.
Place potatoes in mixing bowl and add olive oil. Mix well.
Combine spices and stir into potatoes.
Pour potatoes onto baking sheets. Spread them out as much as possible.
Bake for 20 minutes. Flip all potato slices and bake for another 20-25 minutes.***Watch carefully because they can burn suddenly. They should be crispy on the outside but still soft inside. Remove from oven and turn to BROIL.
Spray the bottom of an iron skillet or baking dish with cooking spray.
Line half of the potatoes on the bottom overlapping as necessary.
Salt and pepper potato layer.
Sprinkle on half of the cheese, half of the bacon and half of the green onions.
Spread the rest of the potato slices on top and salt and pepper. Then cover with remaining cheese, bacon and green onions. Place under broiler until cheese is melted.
Serve with sour cream and diced tomatoes.
