Irish Pub Nachos

Ingredients
  

  • 4 med-large potatoes **waffle fries make a good substitute
  • 2 Tbsp olive oil
  • 1 tsp onion powder
  • ½ tsp thyme
  • 1 tsp Cajun seasoning
  • ½ pound bacon, cooked and crumbled **or 3-4 ounces bacon bits
  • 4-5 green onions, sliced and roughly chopped
  • 2 cups cheddar cheese, grated *any good melting cheese will work
  • 1 cup sour cream
  • 1 cup fresh tomatoes, diced

Instructions
 

  • Preheat oven to 400°.
  • Spray 2 baking sheets with cooking spray.
  • Scrub potatoes and cut out any bad parts. Dry with paper towels.
  • Slice potatoes about ¼ inch thick.
  • Place potatoes in mixing bowl and add olive oil. Mix well.
  • Combine spices and stir into potatoes.
  • Pour potatoes onto baking sheets. Spread them out as much as possible.
  • Bake for 20 minutes. Flip all potato slices and bake for another 20-25 minutes.
    ***Watch carefully because they can burn suddenly. They should be crispy on the outside but still soft inside.
  • Remove from oven and turn to BROIL.
  • Spray the bottom of an iron skillet or baking dish with cooking spray.
  • Line half of the potatoes on the bottom overlapping as necessary.
  • Salt and pepper potato layer.
  • Sprinkle on half of the cheese, half of the bacon and half of the green onions.
  • Spread the rest of the potato slices on top and salt and pepper.
    Then cover with remaining cheese, bacon and green onions.
  • Place under broiler until cheese is melted.
  • Serve with sour cream and diced tomatoes.
