Ingredients
1½-2 poundscherry tomatoes
Marinade
⅓cupolive oil
1/3cupbalsamic vinegar
2Tbsphoney
3tspminced garlic
⅔cupfresh basil, chopped
3Tbspfresh thyme, chopped
1tspsalt
½tsppepper
chili flakes**I do a couple of shakes
burrata cheese
crusty bread or ciabatta, cut into serving pieces. ** I drizzle the pieces with olive oil and toast under the broiler.
Instructions
Wash tomatoes and cut into bite-size pieces...either in half or quarters.
Mix together all marinade ingredients and pour over tomatoes. Mix well, cover and refrigerate until ready to serve.
For a crowd, place 3-4 burrata balls on the serving dish and pour tomatoes over. Serve with the bread.For individual serving place ½ burrata in a bowl and spoon on tomatoes.
