Nothing tastes better on a hot summer day than fresh marinated tomatoes with fresh herbs…with soft burrata cheese on crusty bread. It will make your eyes roll back in your head.

This is the definitive GIRL DINNER. Light, delicious and sooo satisfying. 

Wash the tomatoes and cut them up so they are easy to eat…the larger ones you may want to cut into quarters.

 

Mix together the olive oil, vinegar, honey, garlic s&p and chili flakes.

The chili flakes are optional of course.

Add in the fresh basil & thyme and mix it altogether. Cover and refrigerate until ready to serve.

I like to use ciabatta rolls. I cut them in half, drizzle with olive oil and toast under the broiler.

Cut crossways into triangles.

YOU CAN USE ANY GOOD BREAD.

Pour the tomatoes over as much burrata cheese as you think you need and serve with the bread.

Marinated Tomatoes with Burrata

Bite size tomatoes with basil and creamy burrata...eat with crusty bread. DELICIOUS. @mostdeliciouslife.com

Ingredients
  

  • 1½-2 pounds cherry tomatoes

Marinade

  • cup olive oil
  • 1/3 cup balsamic vinegar
  • 2 Tbsp honey
  • 3 tsp minced garlic
  • cup fresh basil, chopped
  • 3 Tbsp fresh thyme, chopped
  • 1 tsp salt
  • ½ tsp pepper
  • chili flakes **I do a couple of shakes
  • burrata cheese
  • crusty bread or ciabatta, cut into serving pieces. ** I drizzle the pieces with olive oil and toast under the broiler.

Instructions
 

  • Wash tomatoes and cut into bite-size pieces...either in half or quarters.
  • Mix together all marinade ingredients and pour over tomatoes. Mix well, cover and refrigerate until ready to serve.
  • For a crowd, place 3-4 burrata balls on the serving dish and pour tomatoes over. Serve with the bread.
    For individual serving place ½ burrata in a bowl and spoon on tomatoes.
