These AMAZINGLY DELICIOUS cookies are inspired by the fabulous Kentucky Butter Cake, winner of the Pillsbury Bake Off in 1963. We are dealing with some powerful vintage magic here and when you taste these you will be onboard.

Cream together butter with white & brown sugar.

Beat in eggs and vanilla.

Stir in flour, baking powder and salt.

Roll into tight balls however large you wish and flatten slightly.

Bake them up and baste on butter sauce. YUM! Let it cool and the tops harden then sprinkle with powdered sugar.

Don’t be surprised if these become your new favorite cookie!

Kentucky Butter Cookies

Ingredients
  

  • 1 cup butter, softened
  • cup white sugar
  • 4 Tbsp brown sugar
  • 2 large eggs
  • 2 tsp vanilla
  • 3 cups flour
  • 2 tsp baking powder
  • ½ tsp salt

Butter Sauce

  • 4 Tbsp butter
  • ½ cup powdered sugar
  • 4 tsp water
  • ½ tsp vanilla

Instructions
 

  • Preheat oven to 350°.
  • In mixing bowl cream the softened butter with the sugars.
  • Add the eggs and vanilla and beat for 1-2 minutes
  • In a separate bowl mix the flour, baking powder and salt.
    Add into the egg mixture and mix until blended.
  • Roll into 12 large or 24 smaller balls. Place onto parchment covered cookie sheet spacing apart 2 inches. Flatten slightly with the bottom of a cup.
  • Bake for 10-11 minutes.
  • Cool slightly on cooling rack.

Butter Sauce

  • Melt the butter. Whisk in the sugar, water and vanilla until the sugar is dissolved and there are no lumps.
  • Use a basting brush and cover the tops of the cookies. Use all of the butter sauce.
  • Allow to cool completely until the butter sauce hardens. Sprinkle with powdered sugar if desired.
