Marry Me Soup
Rich and creamy with sundried tomatoes, pasta and spinach.

oil from jar of sun-dried tomatoes

sundried tomatoes, chopped

chicken broth

heavy cream

fresh basil, chopped
*or 2 tsp dried basil

uncooked pasta of choice
*I used medium shells

baby spinach, roughly torn
1½
cups
parmesan cheese, shredded

cups
cooked chicken
*I used rotisserie chicken

ounces
cream cheese, cut in cubes
Instructions
Measure out 1 Tbsp of oil from the jarred sun-dried tomatoes into heavy pot over high heat.
Add garlic and onions. Cook and stir 3-5 minutes until onions are softened. Stir in the sun-dried tomatoes. Sauté for another minute.
Pour in the chicken broth and heavy cream. Stir in basil, garlic powder, Italian seasoning, salt and crushed red pepper.
Heat until it just comes to a boil. Stir in the pasta. Bring the soup back to a boil and turn to low. Simmer for 8 minutes.
Stir in the spinach, parmesan and chicken. Stir until parmesan is heated.
Mix in the cream cheese. Cover with lid and turn heat to low. Stir every few minutes until cheese is melted.
