Spray 2 large baking sheets with cooking spray. Cover with tortillas, doing two batches if necessary. Bake for 6 minutes. Flip with tongs. Bake another 6-10 minutes until crispy. Set aside.
Over high heat, cook ground turkey breaking up with spoon.Stir in ¾ cup water and 1 packet of taco seasoning. Mix well and heat until bubbling. Cook and stir for 1 minute. Remove from heat.
Place 6 tortillas on baking sheet. Spread about 1 Tbsp of enchilada sauce onto each tortilla. Spoon on a generous layer of refried beans.
Spoon on the meat mixture. Sprinkle with cheese.
Cover with another tortilla.
Spread enchilada sauce on top. Cover with cheese.
Bake for 10 minutes.
Top with sour cream, guacamole, sliced olives, diced tomatoes and sliced green onions. Use a large knife to cut each pizza into 4 wedges.
