Oven Baked Chimichangas

- 2 cups chicken, cooked and shredded
- 1 cup salsa
- 1½ tsp cumin
- 1 tsp salt
- 1 cup shredded cheese
- 3-4 green onions, sliced
- 1 15 ounce refried beans
- 1 ripe avocado, sliced
- 6 8 inch tortillas
- ¼ cup butter, melted
Preheat oven to 400°.
In medium bowl, mix together chicken, salsa, cumin, salt, cheese and green onions.
Lay out tortilla. Spread about 2 tablespoons of refried beans in center of each tortilla.
Spoon on about ½ cup chicken mixture. Lay 2-3 avocado slices on top.
Fold in two sides of tortilla and roll up. Place seam side down on baking sheet baked with cooking spray.
Spoon melted butter over chimichangas.
Bake for 25 minutes.
Garnish with sour cream, guacamole and chopped tomatoes.
