Pumpkin Spice Donut Holes

Ingredients

flour

sugar

brown sugar

baking soda

salt

cinnamon

nutmeg

eggs

15 ounce
pumpkin
½
cup
coconut oil, melted and cooled
**can use canola or vegetable
1
tsp
vanilla
Cinnamon Coating
½
cup
butter, melted
1
cup
sugar
½
tsp
cinnamon
Glaze
1½
cups
powdered sugar
1-3
Tbsp
milk, more if needed
½
tsp
vanilla
sprinkle
nutmeg or pumpkin pie spice
Instructions
Preheat oven to 350°.
Mix all dry ingredients together in a large mixing bowl. Set aside.
Whisk eggs in a medium mixing bowl.
Add in pumpkin, oil and vanilla. Whisk together.
Pour wet ingredients into dry and mix until well incorporated. Don't over mix.
Spray mini muffin tin with cooking spray.
Spoon batter into muffin tin with a teaspoon, filling about ⅔.
Bake for 12-15 minutes.
Remove from tin and cool completely.
Cinnamon Coating
Mix cinnamon and sugar in small bowl.
Coat each muffin in butter and then roll in cinnamon and sugar.
Glaze
Whisk powdered sugar and milk together, adjusting milk as needed. It should be about the same consistency as honey.
Add vanilla and nutmeg. Roll donut holes in glaze. Place on cooling rack to dry.
