Rocky Mountain Crockpot

Ingredients
  

  • 1 pound ground sausage *I use turkey Sweet Italian sausage
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 6 medium potatoes, sliced
  • 1 15 oz can black beans, drained and rinsed
  • 1 15 oz can corn, drained
  • 2 10 oz cans Rotel Diced tomatoes & green chilies
  • 2 tsp minced garlic
  • 1 tsp chili powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1-2 cups cheddar cheese, grated

Toppings

  • sour cream
  • cilantro leaves

Instructions
 

  • Cook sausage in skillet until no longer pink.
    If desired turn heat to medium and allow the sausage to cook without stirring for 3-4 minutes. Stir and repeat a couple of times until sausage is well browned.
    Drain if necessary.
  • Pour cooked sausage into crockpot.
  • Add onion, green pepper, potatoes, black beans, corn and Rotel. Mix well.
  • Stir in garlic, chili powder and salt & pepper.
  • Cover and cook on high for 4 hours or low for 6 hours.
    Salt and pepper to taste.
  • Top with grated cheese. Cover until melted.
  • Serve with sour cream and cilantro.
