Rocky Mountain Crockpot is a wonderful cozy meal. There are many variations of this dish and is often made as a casserole. I like to throw it all in the crockpot and have the magic of dinner appearing in the evening. Nothing better.
I always use Turkey sausage – specifically Italian Sweet sausage. Use whatever kind you like, just be sure and drain off any oil.
Brown the sausage and throw it in the crockpot. Add the onions, green pepper and potatoes.
Add the black beans, corn and Rotel tomatoes and mix it all together.
Add the spices and stir.
Cover and let it cook.
Salt and pepper to taste and to with grated cheese. Cover and let it melt!
Dish it up and top with sour cream and cilantro.

Ingredients
- 1 pound ground sausage *I use turkey Sweet Italian sausage
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 6 medium potatoes, sliced
- 1 15 oz can black beans, drained and rinsed
- 1 15 oz can corn, drained
- 2 10 oz cans Rotel Diced tomatoes & green chilies
- 2 tsp minced garlic
- 1 tsp chili powder
- 1 tsp salt
- ½ tsp black pepper
- 1-2 cups cheddar cheese, grated
Toppings
- sour cream
- cilantro leaves
Instructions
- Cook sausage in skillet until no longer pink. If desired turn heat to medium and allow the sausage to cook without stirring for 3-4 minutes. Stir and repeat a couple of times until sausage is well browned.Drain if necessary.
- Pour cooked sausage into crockpot.
- Add onion, green pepper, potatoes, black beans, corn and Rotel. Mix well.
- Stir in garlic, chili powder and salt & pepper.
- Cover and cook on high for 4 hours or low for 6 hours. Salt and pepper to taste.
- Top with grated cheese. Cover until melted.
- Serve with sour cream and cilantro.
