Sweet and Sour Meatballs

- 1½ pounds ground turkey **can also use ground beef
- ⅔ cup cracker crumbs **any unflavored cracker is fine
- ⅓ cup minced onions
- 1 large egg
- 1½ teaspoons salt
- ¼ teaspoon ginger
- ¼ cup milk
Sweet and Sour Sauce
- 4 Tablespoons corn starch
- 1 cup brown sugar, packed
- 1 20 ounce pineapple tidbits **save pineapple juice
- 1¾ cups pineapple juice **juice from pineapple tidbits + 6 ounce can of pineapple juice
- ⅔ cup vinegar
- 2 Tablespoons soy sauce
- ⅔ cup green pepper, chopped
Mix together all meatball ingredients. Prepare sheet pan-spray with cooking spray or line with baking sheet.
Form into meatballs and place on sheet pan. The mixture is sticky so rinse hands regularly to prevent sticking. Cook for 30 minutes and remove from oven.
While meatballs are cooking prepare sauce.
In saucepan, mix together cornstarch and brown sugar.
Stir in pineapple juice, vinegar and soy sauce. Whisk and cook over medium high heat until sauce comes to a boil and thickens. Remove from heat.
Stir in pineapple tidbits and green pepper.
Serve over rice.
