1½poundssweet potatoes, peeled and chopped 1 inch pieces**about 3 potatoes
3tspgarlic, minced
1tspsalt
¾tspginger
½tspblack pepper
½tsppaprika
¼tspred pepper flakes
¼tspcinnamon
3cupsbroth, vegetable or chicken
114 ouncecoconut milk, full fat

Instructions
Heat oil in large pot. Add carrots and onions and sauté until softened, about 5 minutes.Mix in onion, apple, celery, sweet potatoes and garlic and sauté for 2 more minutes.
Add remaining ingredients and bring to a boil, stirring a couple of times. Reduce heat to low, cover and simmer for 20-25 minutes until vegetables are soft.
Use an immersion blender to puree the soup to desired consistency. Add additional broth if needed.Top with sour cream, pepitas, cilantro and red pepper flakes.
