
I love autumn baking…for the smells and the taste. This cake the perfect autumn dessert to serve anywhere, any time.
Start by mixing the flour and spices together and set aside. Place the sugars in a mixing bowl.


Add in the eggs, oil, applesauce and vanilla. Whisk together!



Stir the flour mixture into the wet ingredients.


Grate up any baking apples. I always leave the skin on.


Add the grated apples and pecans and mix it all together.



I use baking spray for the pan and then sprinkle with flour. I turn the pan back and forth to spread the flour and dump out the excess.
Pour the mixture into the baking dish and spread evenly. Throw it in to bake!



Start the caramel sauce by melting the butter. Add in the brown sugar and cream.



Turn up the heat, cook and stir until the mixture boils. Turn heat down and continue stirring while it simmers for 2-3 minutes.


Stir in the vanilla and pecans.



Poke holes all over the cake and then spread with the sauce. YUM!


Apple Caramel Pecan Cake
Ingredients
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 2 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp ginger
- ½ cup sugar
- ½ cup brown sugar
- 3 eggs
- ¾ cup vegetable oil
- ½ cup unsweetened applesauce
- 1 tsp vanilla
- 2 cups baking apples, grated **I used Envy and Honeycrisp
- 1 cup pecans, chopped
Caramel Topping
- ½ cup butter
- 1 cup brown sugar
- â…“ cup heavy cream
- 1 tsp vanilla
- ½ cup chopped pecans
Instructions
- Preheat oven to 350°. Grease and flour a 9×13" baking dish.
- In a bowl mix the flour with baking powder, baking soda, salt, cinnamon, nutmeg and ginger. Set aside.
- Mix the sugar, brown sugar, eggs, oil, applesauce and vanilla with a whisk or beaters until smooth.
- Add the flour mixture to the wet mixture and stir together.
- Stir in the shredded apples and pecans. Pour into prepared baking dish and spread evenly.Bake 35-40 minutes.
Caramel Topping
- Melt butter over medium heat in a saucepan.
- Add brown sugar and heavy creamy. Turn heat to high. Cook and stir until it comes to a boil. Reduce heat to medium. Cook and stir for 2-3 minutes.
- Remove from heat and stir in vanilla and pecans.
Cake
- Use a fork to poke holes all over the cake.
- Pour the caramel sauce over the top and spread evenly.
