Christmas Poke Cake is always a good idea. Chocolate peppermint poke cake is the perfect Christmas dessert.
This is wonderfully easy to make.
Start by baking a chocolate cake according to the directions on the box. Any version of chocolate cake will work. When the cake has completely cooled, use the handle of a wooden spoon to poke holes all over.


Whisk together the pudding mix, milk and mint extract.


Spread over the cake pushing the pudding into the holes.


Whip the cream with the cream cheese and vanilla until firm peaks form. Spread over the top.


Drizzle with chocolate syrup. Use a knife or skewer to swirl into the whipping cream (or cool whip). Sprinkle the top with crushed peppermint candy.



Refrigerate for a couple of hours to set. Store in the refrigerator.

Ingredients
- 1 box cake mix Chocolate cake mix **Make and bake according to box directions in a 9×13" pan. Cool completely.
- 1 -3.9oz chocolate pudding, instant
- 2 cups milk
- ¼ tsp mint extract
- 2 cups whipping cream + 2T cream cheese, ¼ cup powdered sugar, 1 tsp vanilla **can substitute cool whip
- chocolate syrup
- crushed peppermint candy
Instructions
- Using the handle of a wooden spoon poke holes all over the cooled cake.
- Whisk together the chocolate pudding mix, milk and mint extract.
- Pour the pudding over the cake. Use a rubber spatula to spread and gently push into all the holes.
- Whip the cream until stiff.Spread the whipped cream (or cool whip) over the cake.
- Drizzle chocolate syrup over the whipped cream. Use a butter knife or a skewer to swirl through the chocolate.
- Sprinkle the top with crushed candy cane.Keep refrigerated.
