There is nothing like a poke cake for and easy yet rich and delicious dessert! Every variation I have ever had is wonderful!
This one is perfect for summer and tastes like a fresh bite of Hawaii!
What could be easier than baking a white cake mix and then adding some goodies?
Once the cake has cooled use the handle of a wooden spoon to poke holes all over the cake.
Then make a mixture with vanilla pudding and crushed pineapple.
- Two boxes of vanilla pudding
- Three cups of milk…
- And whip it altogether.
- Add 1 cup undrained crushed pineapple…
- …and mix well.
Spread it all over the cake taking time to push it into the holes…top with the remaining crushed pineapple, juice and all!
- Spread the pudding mixture onto the cake.
- Spoon the remaining pineapple…
- and then the remaining pudding mixture.
For the topping whip together a stabilized whipped cream.
- Cream cheese, sugar…
- …and vanilla.
- Whip it up!
- Pour in the whipping cream…
- …and whip until stiff peaks form.
Spread on top and sprinkle with toasted coconut and pecans if you want.
- Spread over cake…
- and top with toasted coconut.
**You can easily toast your coconut under the broiler for a couple of minutes. Just spread on a baking sheet and watch carefully.
This cake is a mouthful of absolute deliciousness!

Hawaiian Poke Cake
A light and creamy cake made with pineapple and fresh cream. Add toasted coconut and pecans to make it amazing! @mostdeliciouslife.com
Ingredients
- 1 boxed White cake mix **make and bake according to directions in a 9x13" baking dish
- 2 3.4 ounces boxes instant vanilla pudding
- 3 cups milk
- 1 20 ounce can crushed pineapple, split
Whipped Frosting
- 1 8 ounce cream cheese, softened
- ½ cup white sugar
- 1 tsp vanilla
- 2 cups whipping cream
Toppings
- toasted coconut
- chopped pecans
Instructions
- Bake cake and let cool.
- Whip together the pudding mix and the cold milk.
- Measure 1 cup of undrained crushed pineapple into pudding. Mix well.
- Using the end of a wooden spoon poke holes all over the cake.
- Spoon the pudding mixture onto the cake and use a teaspoon to gently push into the holes.
- Spoon the remaining undrained crushed pineapple over the top.
Whipped Frosting
- Combine the cream cheese, sugar and vanilla in a bowl. Use an electric beater to mix well.
- Add the whipping cream and whip on high until stiff peaks form.
- Spread onto cake and top with coconut and pecans as desired.
