These cookies are really SPECIAL. We start with a rich buttery cookie dough and add in butter-toasted pecans and toffee bits. Every bite is HEAVENLY!
Break the pecan halves down the middle. I like big pieces but break them into whatever size you like.
Melt 1Tbsp of butter over medium heat. Add in the pecans. Cook and stir over medium to medium-lo heat for 4-5 minutes. Don’t be tempted to turn up the heat! They can burn very suddenly, which is tragic.
Set them aside to cool while mixing the cookie dough.
Cream the butter and sugars together. Whip for a good 3-4 minutes… it makes a difference!
Add in the egg & vanilla but beat until JUST mixed.
Add the flour, salt & baking soda and mix well.
Stir in the toffee bits and pecans and stir it up!
Wrap the dough in plastic wrap and chill for at least 30 minutes.
Scoop the dough onto a baking sheet and then flatten the tops a bit. Add on extra pecans and toffee and throw them in to bake.
These are fabulous hot or cooled! You won’t be able to stop eating them!

Toffee Butter Pecan Cookies
Ingredients
- 1 cup pecan halves
- 1 Tbsp butter
- ½ cup butter, room temperature
- ½ cup granulated sugar
- ⅓ cup brown sugar
- 1 egg
- 1½ tsp vanilla
- 1½ cup flour
- ½ tsp salt
- ½ tsp baking soda
- 1 cup Heath Toffee Bits
Instructions
- Break whole pecans in half (and smaller if desired). Melt 1Tbsp butter in a saucepan over medium heat. Add in the pecans. Cook and stir over medium heat for 4-5 minutes. **Don't turn up heat...they can burn very suddenly!Set aside to cool.
- Add the ½ cup butter and both sugars to a mixing bowl or stand mixer. Cream with beaters for 3-4 minutes until creamy.
- Add egg and vanilla. Mix until just combined.
- Add flour, salt & baking soda. Use a fork to mix the salt and baking soda into the flour. Stir altogether until cookie dough is well mixed.
- Add in most of the pecans and toffee bits, keeping about ¼ cup aside to top the cookies.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Remove from the refrigerator when ready to bake. Preheat oven to 350°.
- Use a scoop and place dough on a cookie sheet with parchment paper or a silicone baking sheet. Flatten cookie tops with your palm or a cup. Place pecan halves and toffee bits on top of each cookie.
- Bake for 10-13 minutes until edges are just turning golden.Cook on a rack. Store in a covered container.
