All that zucchini at the end of summer and what to do with it! This dish is so wonderful and delicious and not just for summertime. It makes for a warm and cozy cold weather meal. Always yummy.
Wash and slice the zucchini lengthwise, about 1/8-1/4 inch wide. If you wish you can salt it on paper towels to pull out some of the water.
Lay out on a baking sheet. Brush with olive oil and salt & pepper. Roast until softened.


Mix together the ricotta cheese, eggs, oregano, basil, salt and pepper.



Now put all the pieces together!
Start with a layer of marinara. Next do a layer of zucchini.


Then the ricotta mixture, mozzarella cheese, and sausage.



Continue layers ending with marinara and mozzarella cheese on top. I usually end up with 3 or 4 layers. Sprinkle with parmesan cheese and bake.



Garnish with fresh basil or parsley for a beautiful dish!

Zucchini Lasagana
Ingredients
- 4-5 med zucchini, washed
- olive oil
- salt & pepper
- 1 pound ground turkey Italian sausage **or any ground meat
- 1 medium onion, chopped
- 1 red bell pepper, seeded and chopped
- 3 cups ricotta cheese
- 2 eggs
- 2 tsp dried oregano **or 2 Tbsp fresh
- 2 tsp dried basil **or 2 Tbsp fresh
- 1 tsp salt
- ½ tsp black pepper
- 4 cup marinara sauce
- 2 cups mozzarella, shredded
- fresh basil or parsley for garnish
Instructions
- Preheat oven to 350° degrees.
- Wash & dry zucchini. Slice off both ends. Cut into slices lengthwise ⅛-¼" thick.
- Lay out zucchini slices onto a baking sheet. Brush with olive oil and salt & pepper.
- Bake for 11-12 minutes.
- Pat the zucchini dry with paper towels.
- Meanwhile, brown Italian sausage in a med-hot skillet. If using turkey sausage add a little olive oil as necessary. Break meat apart and cook until no longer pink.
- Add onions and pepper. Cook and stir until softened, about 4 minutes. Add olive oil if needed. Set aside.
- In a bowl mix the ricotta, eggs, oregano, basil, salt & pepper.
- Spread a layer of marinara in an 11×13" baking dish.Then layer it all together. Layer two or three times…it doesn't matter.1. Zucchini2. Ricotta mixture3. Mozzarella4. Sausage onion mixture5. Marinara sauce**NOTE – I often lose track of the layers but not to worry! Just get it all in the pan and it will turn out lovely!
- Top with marinara and mozzarella cheese. Sprinkle with Parmesan.
- Cover with foil and bake for 30 minutes.
- Remove foil and return to oven for 10 minutes.If you like you can turn on the broiler for the last 5 minutes to brown the cheese a bit.
- Top with fresh basil or parsley.
