Blueberry Lemon Cookies are the perfect summer cookie. The dough has a butter base with zesty fresh lemon and bursts of blueberry! Throw in some white chocolate and DONE!

I miss baking cookies in the summertime and these are the perfect bridge into autumn baking, but with all the tastes of summer. Absolutely delicious!

Mix all the dry ingredients together and set aside.

Whip together melted butter with white and brown sugar.

Add in fresh lemon zest, fresh lemon juice, 1 egg and 1 egg yolk and whip it up good.

Stir in the dry ingredients until just mixed together.

Stir in the white chocolate chips and the luscious blueberries. **If using frozen blueberries keep frozen until ready to stir in.

Mix together and carefully spoon out onto the baking sheet. Gently form into balls and add any stray blueberries.

Gently smash down a bit with your hand.

Bake until beginning to turn golden on the edges.

Melt white chocolate and drizzle on!

Blueberry Lemon Cookies

Ingredients
  

  • 3 cups flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 2 tsp cornstarch
  • 1 cup butter, melted and cooled
  • 1 ¼ cup white sugar
  • ¼ cup brown sugar
  • Zest of 3 lemons
  • 1 ½ Tbsp lemon juice
  • 1 L egg
  • 1 L egg yolk
  • 1 cup blueberries **fresh, frozen or dehydrated
  • 2 cup white chocolate chips, split

Instructions
 

  • Preheat oven to 350°. Cover baking sheets with parchment paper or silicone baking sheets.
  • In mixing bowl mix together the flour, baking powder, baking soda, salt and cornstarch. Set aside.
  • Melt butter in microwave and allow to cool until no longer hot. Can place in the refrigerator to chill.
  • Add sugars to butter and whip until smooth. Add lemon zest and lemon juice and whip together.
    Beat in egg and egg yolk.
  • Add in dry ingredients and mix until just incorporated.
    Stir in blueberries and *1 cup white chocolate chips.
    **If using frozen berries, keep frozen until ready to mix in.
  • Use a heaping large cookie scoop for each cookie. (About 3-4 Tbsp).
    Place about 2 inches apart, forming into balls and adding in additional blueberries as needed. Use your hand to gently smash each cookie.
  • Bake for 14-16 minutes until cookies are browning around the edges.
    Cool for 5 to 10 minutes before removing to cooling rack.
  • Melt remaining white chocolate chips in the microwave in 20 second bursts until you can stir smooth with a spoon.
    Use spoon to drizzle cookies.
