I used to help my mom prep her stroganoff by breading and frying all the bite-sized pieces of beef. It’s a step I’m not willing to invest in these days.
Add to that my love of crock-pot meals and Voila!!! Here is a quick and dirty recipe that is fabulous! Just pour the sauce over the meat and let it cook away all day. What could be better than a rich, creamy sauce with chunks of tender beef and pasta!
Mix together some Golden Mushroom soup with beef broth and a packet of onion soup mix.
Add some Worcestershire Sauce and salt and whisk it altogether.
I usually buy a small roast that I trim really well. Cut that up into bite-sized pieces and throw it in the crockpot and top with a chopped onion.
Pour the sauce over the meat and mix well. Turn to low for about 5-6 hours and just let it cook until the beef is nice and tender.
Remove the lid and add the cream cheese and sour cream. Put the lid on allowing the cheese to melt and mix in.
Serve over hot egg noodles or mix the noodles right into the sauce.
Either way….DELICIOUS!

Crockpot Beef Stroganoff

Ingredients
- 1½-2 pounds lean beef, trimmed stew meat, round steak, chuck roast, petite sirloin
- 2 cans Campbells Golden Mushroom Soup
- 1 cup chopped onion
- 1 14 ounce beef broth
- 1 envelope onion soup mix *or ½ t onion powder, ½ t paprika, ½ t black pepper & ¼ t garlic powder
- 1 Tbsp Worcestershire sauce
- 1 tsp salt
- 4 ounces cream cheese
- ½ cup sour cream
- 16 ounces egg noodles **or rice
Instructions
- Cut meat into bite size pieces.
- In 2 quart or larger crockpot, add meat and onions.
- In small bowl, mix together Golden Mushroom soup, beef broth, onion soup mix, Worcestershire Sauce and salt. Pour over meat and onions, stir together.
- Cover with lid and cook on low for 5-6 hours.
- Add in cream cheese and sour cream and cover with lid for 2-5 minutes allowing cream cheese to melt. Stir together until creamy.
- Serve over noodles or rice.
What’s a substitute for the mushroom soup?
You could make a roux with butter, flour and cream, and then add sliced mushrooms. But that is missing the point. This recipe is dirty, fast and easy. We have a from scratch version almost ready to post.
