These beautiful appetizers are SO EASY and so YUMMY! I have made these for years and they are ALWAYS such a big hit.
Maybe the most important thing to do is to choose your salami wisely. You don’t want to use “deli sliced” which is very thin. They should be about the size of Ritz crackers and thicker cut…about 1/8″ thick. You could just buy a small log and slice your own.
Spread about 1 tsp of cream cheese onto a slice of pepperoni. Make a stack with 5 salami slices.
Squeeze the stack gently while turning to help distribute the cream cheese evenly. Use a butter knife to smooth the edges.
Chill for a bit so that the cream cheese isn’t too soft. Then use a sharp knife and cut each stack into 4 wedges.
Top each wedge with a green olive and skewer with a wooden toothpick.
ENJOY!!!

This snack is sooooooo “scrummy” as Mary Berry would say. I could eat four dozen in one sitting…and may have actually done that. So good for girl dinner, a little party snack, or whatever you want it for!
