These cookie bars are so ooey-gooey delicious you will long for them after they are gone! Using crushed graham crackers in the cookie base makes them truly taste just like s’mores…but dare I say BETTER??? Try them out and you decide.
DISCLAIMER: The instructional photos here are NOT accurate. But I posted them anyways because I didn’t want to re-do them AND most importantly they turn out fine anyways. I just sometimes when baking an old recipe just throw everything willy-nilly into the mixing bowl and just carry on.
SOOO...It would have been much easier to cream the butter & shortening together...
…and then adding in the eggs and vanilla so that the mixture would be smooth and creamy before adding in the dry ingredients.
Which would make it MUCH EASIER to mix the clumps of butter in…which I had to do with my hands.
Alas & Alack here we are. But we will move forward at this point.
Press about 2/3 of the dough into a prepared baking dish and press down evenly.
Carefully drop dollops of marshmallow cream over the crust. This is a little tricky and it’s almost impossible to spread without pulling up the crust so just do your best and it’s fine.
Now top with chocolate bar pieces…whatever kind you like.
Then sprinkle with the remaining graham cracker dough.
And THEN just to make this dessert INSANE break up chocolate bar pieces and stick them all over the top.
Throw it in the oven and just try to imagine the most gooey-yummy thing to come out and that’s what it is! The marshmallow cream is bubbling up with the chocolate bar pieces and graham cracker cookie bits.

S'more Cookie Bars
Ingredients
- 1 cup butter
- 1 ½ cups brown sugar
- 2 large eggs
- 1 tsp vanilla
- 2 cups all purpose flour
- 2 cups graham cracker crumbs
- 1 tsp baking powder
- ¼ tsp salt
- 13 ounces marshmallow cream
- 3 4.4 ounces chocolate bars *I use Symphony bars **Or 3 cups chocolate chips
Instructions
- Preheat oven to 350°. Line a 9x13" pan with parchment paper. (Or spray with cooking spray).
- Whip the butter and brown sugar until light and fluffy, 3-5 minutes.
- Add eggs & vanilla and beat another 30 seconds until well mixed.
- In a separate bowl mix the flour, graham cracker crumbs, baking powder and salt.
- Mix the wet ingredients with the flour mixture until well mixed.
- Press about ⅔ of the mixture onto the bottom of the prepared baking dish.
- Drop the marshmallow cream by spoonfuls over the crust.
- Cover with chocolate squares or chocolate chips. *Reserve some for the top.
- Drop clumps of cookie dough on the top leaving some spots uncovered. Place some broken chocolate (or chocolate chips) on top.
- Bake for 30-32 minutes.
- Cool completely before cutting into pieces.
