
Years ago while visiting my son on the Upper West side of Manhattan I came across this basement bakery. I bought a chocolate chip walnut cookie, and it was the best part of my trip thus far. It was warm and the chocolate was still melted and it was chock full of nuts. It was HEAVEN.

THE COOKIES ARE HUGE!
My daughters and I returned and bought 6 to last us through our trip.
That Saturday we were out and about and noticed a very long line winding itself around the block and turned the corner to discover Levain Bakery as the source.
The recipe is pretty easy and basic with a couple of distinctions.
FIRST…it uses cake flour, which is AP flour with cornstarch added. I give instructions on how to make your own.
SECOND…it doesn’t use vanilla! Who would’ve thought? But trust me, it’s all good.


Just cream the butter and sugars together.


Add the eggs and mix for just 30 seconds.

Then add the important ingredients…CHOCOLATE AND WALNUTS!


Mix it all up!

Separate into 8 equal pieces and place 4 on each baking sheet.


DON’T OVERBAKE!

Levain Chocolate Chip & Walnut Cookies
Ingredients
- 1 cup butter, softened
- ¾ cup brown sugar
- ½ cup sugar
- 2 large eggs
- 1 cup cake flour ***OR measure 1 cup of flour. Remove 2T flour and add 2T of corn starch. Mix together.
- 1½ cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 2 cups chocolate chips or chunks ***Levains uses milk chocolate chips. I used 1 cup semi sweet + 1 cup dark chocolate chunks.
- 2 cups walnuts, roughly chopped
Instructions
- Preheat oven to 400°.
- Cover 2 baking sheets with parchment paper or silicone baking sheet.
- Use beaters to mix together the butter and sugars just until butter is incorporated.
- Add eggs and beat on medium for 30 seconds.
- Stir in dry ingredients. Add chocolate chips and walnuts.
- Divide into 8 pieces and form into balls. Place 4 on each baking sheet. Bake for 9 minutes. Cool on rack.***You can make cookies smaller by cutting each dough ball into half, making 16 cookies. Bake for 8 minutes.
These are killer cookies. I’ve gained 10lbs and I’m pretty sure that I’m well on my way to type 2 diabetes.
