Sometimes you need a dish to be just like your grandma made it. These Cheesy Potatoes are straight from Grandma Twila’s kitchen. And everytime we make them everyone wants the recipe.

We have many other potato dishes we make with cream sauces and amazing different cheeses…but sometimes this hits the spot. This dish comes all wrapped up in wonderful memories. Priceless.

Boil the potatoes whole in salted water. If you use GIANT potatoes like I did just cut them in half.

*Don’t cut them up any smaller. They will become water-logged and have a different texture than we want.

Let them cool enough to be handled…peel with a butter knife. Cut them into thick slices or chunks. Place into a 9×13 baking dish and set aside.

Pour 1 can of cream of chicken soup into a mixing bowl.

Add melted butter, sour cream, salt & pepper and chopped onions if desired.

Sprinkle cheese on top of the potatoes. Spoon on the cream mixture and carefully mix with the potatoes.

**Don’t over mix…you will mix twice more while baking.

Bake until nice and bubbly.

This may not be the prettiest of side dishes but…YUM!

 

Twila's Cheesy Potatoes

These are the cheesy potatoes that Grandma Twila made for Sunday dinner and always for Easter. @mostdeliciouslife.com

Ingredients
  

  • 7 medium potatoes
  • 1-2 cup cheddar cheese, shredded **or any cheddar mix
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • ¼ cup butter, melted
  • 1 tsp salt
  • ½ tsp pepper
  • 1 medium onion, chopped **optional

Instructions
 

  • Place potatoes in a large pot and cover with water by 1-2 inches. Cooke at high until water comes to a boil. Cover with a lid and turn heat to low.
    Boil until potatoes can be pierced easily with a sharp knife, anywhere from 20-45 minutes depending on the size of the potatoes.
  • Preheat oven to 350°.
  • Remove potatoes to a cooling rack until they can be easily handled.
    Remove the skin. Slice or cut up however you wish and place in 9x13 baking dish.
  • Sprinkle with the cheddar cheese.
  • Mix together cream of chicken soup, sour cream, melted butter and chopped onion (if desired).
  • Spread over the potatoes and gently mix with a rubber spatula.
  • Bake uncovered for 35-40 minutes stirring twice.
    Remove from oven and serve.
